Stovetop Cajun Pinto Beans

I LOVE SPICE!!! Let's just get that out of the way. These stovetop Cajun Pinto Beans is an easy and delicious weeknight meal and packed with so much spice and flavor. 

I love a dish that’s one pot! 

Bean dishes are so versatile you can serve them as a main or side dish. Over rice or with tacos. You really can have fun with beans and the things that you pair them up with.  

Back to me loving spice. Sometimes a little too much LOL. But, these beans had the perfect balance of kick and earthiness. If that little FYI didn't convince you, omit the jalapeño and ground red pepper. 

P.S. Look I didn’t measure my seasonings. You all know that you should season to taste or until your ancestors send you a sign of approval. So there ya go!!

Ingredients
  • 1 lb pinto beans, sorted, debris removed
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 jalapeños, seeds removed, chopped small
  • 2 large tomato diced
  • fresh thyme 
  • chicken stock (Enough to cover your beans.)
  • garlic powder
  • onion salt
  • ground cumin
  • cajun seasoning
  • citrus adobo
  • black pepper
  • ground red pepper



Directions
  1. Sort beans and remove any debris. Place beans in a large pot or bowl and cover with water 2 inches above the beans. Let soak overnight. Drain water and rinse. If doing a quick soak. Follow the package instructions. 
  2. In a large stock pot. Add beans, onions, garlic, jalapeños, thyme, tomatoes, seasonings and cover with chicken broth. Stir.
  3. Cover and cook on medium heat 3-4 hours. Periodically checking water level. (Add more stock or water if needed.)
  4. Cook rice according to package directions.
  5. Serve beans over a bed of rice and top with smoked sausage, hot sauce, cilantro, green onions, all optional but so good!!
