Shrimp & Grits+
Shrimp & Grits... my ultimate favorite brunch meal. But, I'll honestly eat it any time of day.
The grits are a real dream. They can be paired with shrimp, fried wings, cajun salmon or fried catfish filets. Just to name a few of my favorite pairings.
The creaminess of the grits is the real trick and treat (hehe). These grits are so smooth and thick every single time. And the big,lock box secret is heavy cream, half & half and butter. Don't even try to act surprised.
Mark this one as a cheat meal!!
One other tip to perfectly creamy and thick grits is using stone-ground grits. Not your 5 minute instant grit time. But, anything worth having is worth the wait right?

Shrimp & Grits
Prep Time: 10 min
Cook Time: 1 hour
Ingredients:
- 1 pound fresh shrimp, tails removed
- 2 cups heavy cream
- 1 1/2 cups half and half
- 3 1/2 cups water
- 1 stick butter
- 1 1/2 cup stone ground grits
- 1 cup small cubed gouda
- 1 cup shredded sharp cheddar cheese
- 1 teaspoon paprika
- half cup diced tomato
- half cup diced onion
- 2 teaspoon salt
- 1 teaspoon old oldbay
- dash teaspoon ground black pepper
- 2 garlic cloves, minced
- 1 pack andouille chicken sausage (or bacon if that is your preference)
- 2 tablespoons lemon juice
Directions:
- Combine heavy cream, half and half, water, butter and salt. In a dutch oven or stock pot. Bring to a simmer stirring occasionally.
- Gradually whisk in grits. This avoids clumping.
- Turn heat to low and cook, stirring frequently, for 45-60 minutes. (add more water if grits get too thick)
- Stir the cheese & paprika into the grits, cover the pan, and set it aside.
- Turn a skillet over medium heat, add the butter and garlic Add the sliced chicken sausage, salt and black pepper, and stir, cooking for about 4 minutes.
- Add the onions, tomato and shrimp. Toss to combine, and cook for an additional 5 to 7 minutes.
- Remove from heat, add the lemon juice and old bay, and toss to combine.
- Place the grits in a serving bowl with the shrimp,sausage and its sauce on top.
- Serve warm.
